Chemical Requirements

The chillies ground (powdered) shall also comply with the requirements given in Table 3.13. SCOVILLE INDEX

When tested in accordance with the method given in IS 8104, the Scoville index in chilli, whole and ground (powdered) chilli shall not be less than 24,000. Chilli of lower Scoville index than that specified may be supplied as agreed between the purchaser and the supplier.
