HPLC and GC combined with mass spectrometry allow the immediate determination of components in chamomile extract [16, 128]. Characteristic fragmentation of the compounds can be observed using different ionization methods: Electrospray Ionization (ESI) or Atmospheric Pressure Chemical Ionization (APCI). The MS data can be compared with data of reference substances in experiments or literature (see Figure 10.5).

LC/MS analysis provides quick results concerning the quality of a pure chamomile oil [16].
